Sauce & tomatoes

A thin sauce layer can keep the base in focus

Distribution matters as much as the size of the spoonful.

Tomatoes, basil, mozzarella and flour arranged on a pale kitchen worktop.

A useful starting point

Use the amount and method appropriate to the pizza recipe. Spread sauce so that the distribution is understandable across the base rather than concentrated in the centre. Leave the intended edge according to the style you are making. A generous-looking layer is not automatically a better balance, particularly when other ingredients also contribute moisture.

Bring it into your kitchen

Review the finished slice and note whether sauce overwhelms the crust or disappears entirely. Keep the topping combination comparable if you want to understand a change in sauce quantity. Choose a simpler pizza when learning the distribution. A clear tomato-and-cheese combination often reveals the effect of a sauce adjustment more readily than a crowded assortment of ingredients.

Before your next pizza night

  • Spread according to the recipe.
  • Avoid an accidental centre pile.
  • Compare one quantity change.
