Dough & handling

Keep bench flour under control

A useful work surface does not need a cloud of flour.

A useful starting point

Prepare the surface according to your dough method and add working flour deliberately. Too much scattered flour can make the kitchen messy and obscure what changed in the dough handling. Keep the bag away from ready-to-eat food and clean the area after preparation. Flour is a raw ingredient; raw dough should not be tasted.

Bring it into your kitchen

Notice where sticking actually occurs rather than adding flour automatically after every movement. Use tools appropriate to the recipe and keep the shaping area free of unrelated items. Record any substantial addition when comparing batches. The goal is a manageable surface and consistent dough handling, not an exact visual imitation of a busy pizzeria counter.

Before your next pizza night

  • Prepare a clean work area.
  • Add working flour deliberately.
  • Do not taste raw dough.
